A San Diego Native, Juan Pablo is no stranger to Mexican cuisine & culture. After graduating the University of San Diego High School in 1998 Juan went on to the University of Nevada Las Vegas to double major in Business & Hospitality Management. Surrounded by the bright lights & fast paced energy of “Sin City”, he developed a deep appreciation for the Wine & Spirits industry, plus he couldn’t cook to save his life.
With a thirst for knowledge Juan went on to continue his studies at the Culinary Institute of America, Greystone Campus in Napa Valley California. There he broadened his horizons until eventually completing both Certified Wine Professional courses, simultaneously passing both Introductory & Certified Levels within the Court of Master Sommeliers and a slew of externships adding to his previous 5 years experience within the service industry. From the Vendimia of Italy’s Piedmont region, to the agave extraction in Arandas, Los Altos de Jalisco, to table side bottle service at The French Laundry in Napa Valley, Juan will always welcome you with a warm smile, passionate conversation, and a jovial attitude.
Currently Juan is the Beverage Director at El Vitral Restaurant & Tequila lounge adjacent to Petco Park in Downtown San Diego. Specializing in authentic Mexican traditional dishes with an upscale modern Culinary Presentation it is easy to choose from the 200 + Tequilas on the menu. Join him on the 1 st Thursday of every month for Tequila 101, a three course dinner/paring is included as novices learn about Tequila in a laid back, fun, & approachable environment.
