Polished Palate Biography


As Bar Manager and Bartender at Agave in New York City, Jason Silverman has turned an already excellent tequila bar and drinks program into a very special destination for Tequila and Mezcal in New York. Jay's objective at Agave is to enrich the public's knowledge and appreciation for agave spirits by offering them well made quality cocktails like the new Blackberry Diamond made with Riazul anejo, sage and blackberry puree, fresh lime and agave nectar, and a selection of the best possible sourced tequilas that can be found in New York. One example of these rare finds is the house aged Casa Noble Reposado, which rests in a small French oak barrel atop the bar until it reaches a deep amber hue. Jay found his way to the bar from years of cooking innovative seasonal American food at Rialto in Boston, KAI at Wild Horse Pass Resort and Spa in Phoenix and ventured into Italian fare as sous chef at Sfoglia Nantucket and Maialino in New York City.

Having spent 12 years as a professional chef in 4 star restaurants and hotels, Jay prepared his palate to appreciate the various intricacies of the wide range of tequilas that can be found on the market. As a traveler to Jalisco and the Tequila regions of Mexico, Jay has studied firsthand the process of how tequila is made in order to bring that appreciation to others. He recently attended the intensive Liquid Lab mixology sessions with the Liquid Chef Junior Merino and is currently working on new seasonal drinks for Agave such as the Watermelon Fresca with hibiscus. Jay also joined the judging panel at the New Mexico International Intimate Tequila Tasting in 2011.

Jay and his wife live in Manhattan and hope to own and operate their own restaurant and tequila bar in the future serving modern southwestern food and fresh fruit margaritas.
